Cashew Cookies With Chocolate Frosting

Ingredients

  • 1 egg
  • ½ teaspoon baking powder
  • 1/3 cup almond flour
  • ¼ liquid, raw, honey
  • 1 tsp Madagascar vanilla
  • ½ cup cashew butter
  • 1/3 cup almond butter
  • 1/2 tsp chia seeds

Frosting Ingredients

  • 1/8 cup cacao powder
  • 1 tbs liquid, raw, honey
  • 1.5 tbs runny almond butter*
  • 1 tsp almond milk

Cashew Cookies With Chocolate Frosting Directions

Preheat the oven to 350 degrees.

Combine all cookie ingredients into a large bowl. Use a handheld mixer on low to medium to blend until smooth.

Do not try to combine yourself or you’ll end up with chunky cookies.

Line a baking tray with parchment paper and use an ice cream scoop to portion out blobs. No need to press down.

Bake in the oven for 17 minutes. Remove from the oven and let cool on the pan completely.

While the cookies are cooling, make the frosting. In a small bowl, stir together the frosting ingredients until smooth.

Using a silicone spatula, portion and spread the frosting on top of the cookies.

Makes seven cookies.

*use runny almond butter versus the hardened part at the end of the container. Otherwise it won’t mix into a frosting like consistency.
